Huevos Rancheros
Complete with Mexican-style eggs, black bean hummus and an extra kick of Chorizo Chicken Sausage, these huevos rancheros will bring zest to your breakfast with every rich, hearty layer.
Instructions
- Pour salsa into a small saucepan over low heat, stirring occasionally until heated through.
- Warm each tortilla in a small skillet over medium heat, then evenly distribute black bean hummus on each. Set aside.
- Add oil to skillet, then crack an egg into the heated oil. Fry and flip until over easy, about 1 minute per side, then place on top of the tortillas. Repeated with remaining eggs.
- Carefully spoon the warm salsa on top of the prepared tortillas.
- Dress with chicken sausage, feta cheese, avocado and cilantro.
- Serve wam.
