London Broil Chimichurri Crostinis

Indulge in a crostini of slow-roasted London Broil Top Round Roast Beef and Muenster Cheese, finished with a homemade Chimichurri sauce that's sure to ravish the dinner party.

Chimichurri Sauce

  1. For sauce, pour all ingredients into a processor. Transfer to bowl and set aside.

Crostinis

  1. Preheat oven to 375 degrees. Slice twelve 1/2-inch slices of bread from the baguette.
  2. Place on baking sheet, and brush generously with olive oil. Sprinkle a little salt on each side.
  3. Bake for about 10 minutes, or until crisp and slightly golden. Remove from oven and cool slightly.
  4. Top each crostini with arugula and half slice of cheese. Broil for 1-2 minutes until Muenster Cheese is melted.
  5. Remove pan from oven and layer half slices of London Broil Roast Beef on top of melted cheese.
  6. Garnish with roasted red peppers and chimichurri sauce.
  7. Serve and enjoy.
