Béchamel Sauce

  1. In a small sauce pan, over medium heat, melt 3 tablespoons of butter.
  2. Add the flour and whisk constantly for 1 minute.
  3. Slowly whisk in the milk until the sauce becomes smooth.
  4. Bring to a boil, and cook until thickened.
  5. Remove from heat and season with the nutmeg.

Croque Madam Sandwich

  1. Place one slice of bread on a clean work surface.
  2. Spread one side of the bread generously with the béchamel sauce (approximately 3 tablespoons), coated side up.
  3. Evenly layer the ham over the béchamel sauce.
  4. Top the ham with the Vermont Cheddar cheese.
  5. Top with the remaining slice of bread.
  6. In a sauté pan over medium-high heat, melt the 2 remaining tablespoons of butter.
  7. Once melted, place the sandwich and cook until well-browned on the bottom, about 2 to 3 minutes.
  8. Carefully flip the sandwich over and continue cooking until the cheese is melted and bubbling.
  9. Remove from heat and top with a pan-fried egg.
  10. Serve warm.
